Protein lemon coconut muffins

Ingredients

  • 2 cup oats
  • 1/4 coconut shreds
  • 1 tbsp vanilla
  • 2 scoop vanilla protein powder
  • 1 cup dairy free milk
  • 2 tbsp lemon zest
  • 1 tsp baking powder
  • 2 tbsp lemon juice
  • 1 ripe bananas (if large use 1)

Instructions

  1. In a bowl, Add the vanilla protein powder, salt and oats
  2. Add the vanilla extract, lemon juice, lemon zest and dairy free milk and beat until smooth.
  3. Cut bananas and add ti mixture
  4. Mix all ingredients until even and smooth in texture
  5. Distribute in a baking tin,
  6. Bake at 350 degrees celsius for 20 minutes
  7. Serve
