Raw Vegan Tomato Gazpacho


  • 6 Medium Tomatoes
  • 1 Red Bell Pepper
  • Half Lemon (squeezed)
  • 1 Medium to Large Avocado
  • 1/2 tsp Dried Basil
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Crushed Garlic
  • Sea Salt (to taste)
  • Black Pepper (to taste)


  1. Chop the tomatoes and red bell pepper and add to the blender along with the lemon juice.
  2. Peel and core the avocado and add the avocado to the blender.
  3. Add the dried basil, oregano and crushed garlic.
  4. Blend.
  5. Add sea salt and black pepper to taste.
  6. Pour out into bowl and refrigerate.
  7. Serve when cold
