Vegan Avocado Cauliflower Rice Stuffed Bell Peppers + Cashew Cheese Drizzle

Ingredients

  • 1 bag store bought caulifour rice (preferably not frozen)
  • 1 tablespoon avocado oil
  • 1 cup diced yellow onion
  • 3 cloves garlic, minced
  • 2 small avocados
  • 1 jalapeño, minced
  • 1/2 cup cilantro, finely chopped
  • 2 tablespoons lime or lemon juice
  • salt + pepper
  • half package of beef-less ground beef from @traderjoes
  • Cashew cheese •Organic Cheesy Vegan Cashew Dip @traderjoes
  • 3-4 Bell Peppers medium-large size

Instructions

  1. Heat a large sauté pan over medium heat. Add avocado oil. Once hot, add diced onions and sauté for 5 minutes until translucent, stirring occasionally. Add garlic and cook for another minute. Add in half package of beefless grounds.
  2. Next add the cauliflower rice. Cover and let cook for 8-10 minutes, stirring occasionally, until softened.
  3. While the rice cooks, make the avocado mash. Add avocados to a large mixing bowl and mash with a fork. Stir in the jalapeño, lime juice, and salt and pepper.
  4. Add avocado mixture to cauliflower rice and mix well. Stir in cilantro.
  5. Clean and slice bell peppers in half cleaning out the center creating a boat like shape. Place on a non stick baking tray and scoop in the rice mixture. Bake on 325 for 20 minutes.
  6. Melt packaged cashew cheese dip and drizzle on top!
